It is going to be good... Let's try my Hearty Honey Oatmeal.

Here is my so-call recipe for the Hearty Honey Oatmeal. It is very easy to do. It takes about 8 minutes to make.

Ingredients

8 tablespoon of Instant Quaker Oats
2 cups of regular Almond milk I use Blue Diamond Brand.
A handful of Craisins (Dried Cranberries)
A handful of Shaved Almond
A teaspoon of Honey (optional)
An egg (optional)

Heat up Almond Milk with High heat and add instant oats right away.  Stir Combination constantly so that oats will be mixed in. Once Almond milk starts bubbling in about 5 mins, turn stove off.
Top Oatmeal with Craisins, Almond and honey.

Here I come 2011! No more bad food!

This is my very first blog so hope you will like it. I am doing this because I want to share my story with people who are struggling with high cholesterol problems.
I am a registered nurse and I DO NOT, let me say it again I DO NOT want you to ignore your Doctors' advices.  If your doctor tells you to take crestor or simvastatin to lower your cholesterol, I highly recommend you to do so. However, for me; I will not and I refuse to take any medications due to all the side effects that medications might have on our bodies.  

I know I can fight this. I know I can control my diet by eating more healthy stuff and I can ultimately bring my cholesterol down. Now, my question is,"How can I eat healthy by not just eating salad and oatmeal everyday?"  I am determined to create or research some good vegetarian or I should say not strictly vegetarian (supposely more healthy and delicious) dishes online. 

In the beginning of this year, I did the Daniel's fasting for 3 months due to religious reason. In those 3 months, I only eat non-processed food and no meat at all. As a result, I lost 5 pounds, my overall cholesterol went from 223 to 175 and my LDL decreased and HDL increased (don't want to go into details).  Everyone around me was happy for me until I went for my blood donation. When I went to the Carter Blood Center, they told me that I could not donate blood because my Hgb (iron) level was way to low. They gave me a little booklet to read and they sent me home. The booklet is about how to eat iron rich food in order to increase my hemoglobin level. I thought I was healthy for a while and I didn't realize that my iron has gone down. As a result, I felt tired easily and I even felt like passing out sometimes.

In order to solve this problem, I decided to eat meat again.  So in 4 months time, I gained all of my weight back , plus 3 pounds more. I felt tired again and I had no energy to do anything. I ate like a pig and I didn't care. So the other day, I went to Carter again and they finally said, "wow, your Hgb has gone up to 13!" I am not surprise because I eat so damn much. Anyhow, I am here to set my goal again. I want to eat healthy and I want to find some great recipes to share with people like me.  Someone who enjoys eating and enjoys life.  Someone who wants to eat healthy but yet, doesn't want to sacrify eating good tasty food.

So hopefully, this will help both you and me to lose some weights and possibly lowering our cholesterol without taking medications.
